It Vegan When

I'm not a Veganatzi, and if you are, shame on you. You see, as a child, I was taught two things : to fear God, and to not impose others with my beliefs. So then why the hell am I writing this blog? To document my attempt to stick to a Vegan diet. But I will stress that I am not perfect. I might occasionally eat cheese if I can't help it. Once again, I am not a vegan. A vegetarian mostly, but I am TRYING to stick with a vegan diet. Please enjoy.

Best Vegan Breakfast thus far


Alright, this morning I needed a good and delicious breakfast that would refuel and inspire me.
Now I know I've been trying to stick to this vegan thing and albeit sometimes I slip when I eat cheese but today's breakfast was too good that any carnivore would eat.

What did I have?
Blintzes. Plain and simple. Well, I had Vegan Blintzes that I found at Trader Joes and I topped them with a delicious black berry jam I had apparently bought three months ago but forgot (Don't you just love those sweet surprises?) 

Man, it was sooooo tasty. I paired it with Instant coffee and soy milk and a piece of toast with Earth Balance butter. I'm trying to not actively buy coffee or starbucks due to my lack of funds.
But it didn't help that I spend three bucks on a Vegan Coffee Shake from that place near my school called Scoops.

Alright, off to a job interview tomorrow.

So I'm back and what took me so long?


Hello! I'm back folks. Yeah, it's been almost a year. This might be a rather long post since I've been cooking for two days straight after having eaten out entirely last week. Oh my stomach.

But anyways, a lot has happened to me since I last wrote on the blog so in order to spare readers from all the insipid details, I'll say this:

I'm back in school.
I'm out of a job (thanks Bush!)
I'm starting the Vegan regime again and taking it on a day by day basis.

Plus, I've officially dubbed this Summer the Summer of writing. Since I've been taking an online writing class, I can maybe salvage what ever is left of this summer and finish my short stories, that screenplay, and still find time to post on this blog.

Today I made my favorite Cuban dish. I'm half Cuban (even though I was born there) and to be honest, not a day goes by that I don't think about my Mom's cooking. I would love to create some Vegan Cuban Dishes but it will be trying.
Side Note: If you are ever in Manhattan, in the West Village area, there is a really cute coffee shop that has THE BEST veggie Cuban sandwich I've ever tasted. What doesn't make it Vegan is that it uses real Swiss cheese. The place is called S'nice and if you go, also try the Vanilla Latte.

Well, what I made was a vegan version of Arroz con Frijoles y Picadillo ( a Rice, Beans, and Ground beef dish). I basically used Morning Farms Meal Starter Crumbles and added chopped onions, red bell peppers, minced garlic, red salsa, and some fajita mix found at a local supermarket. The rice came out a little too moist, thus proving that I'm cursed at cooking rice. The black beans came from a can, were drained, and cooked in basil leaves picked from my best friend's plant and half a bottle of beer (which I later drank with the rest of the meal.)
Although I was rather hungry so the side salad didn't really help much.

Tomorrow, my goal is to make home made french fries. Even though I do have left overs, I can't handle eating beans everyday. Sorry to disappoint you, Sir Mix Alot.

Water Water Everywhere

Well, laugh if you want but on September 4th American Apparel is having an Open Call. Yes, I'm going, what ever. I know I'm letting my self open for a let down, but hey, you only live once. So until then, I'm going to be drinking ALOT of water. I drank 4 bottles today. Not too shabby. But seriously, the amount of water one drinks is important for several factors. I always here that in modeling, lack of moisture shows up in your face, making you look tired. and drinking H20 flushes all that crap out of you. Which is why I will try to stick with my routine and beyond the casting date.

I'm Back....

Well, it's been a while.

So much has happened, but I really don't have the patience to talk about it right now.
I'm back on the diet. I'm back to my old ways (or at least trying to be.)
Only this time I will try to post it per meal. The thing is, I every time I wake up the first thing I want to do is go to starbucks because it's right near my house. But because I don't have a job, I wanted to try something different. I actually ate breakfast at home ( or Alby's home.) He doesn't have much refrigerator space so I had to use cream cheese but I did use soy milk.
Hey, it's baby steps, right?

So I had for Breakfast a bowl of Wheatabix, but i tried something different. I hated the soymilk and poured it over with canned peaches, minus that gross juice it comes in. I had chai tea with soy milk and a piece of toast with cream cheese, left over from Noah's bagels. Must go to the market and buy the Toffutti stuff.

I'm doing my laundry and I'm quite bored. For a snack I will have a granola bar and some of these Martinelli's mixed fruit juice that I got at the 99 cent store. Gosh, that place is awesome.

I went to Real Food Daily yesterday with Alby. He had the Salsbury Seitan Plate I love so much. I had an interesting curry pea soup with corn bread and carrot butter spread. Meh.

What to do with all this free time..man the possibilities are endless.

Chocolate Chip Muffins

Chocolate Chip Muffins

My friends Bday is on Wednesday and I'm placating his having to work with some Gharadelli obsession. Birthday's suck a lot less when someone busts out a damn baking pan.

Ingredients:
1-2/3 cups all-purpose flour
2-3/4 tsp baking powder
2 TBS sugar (and more for topping)
1/2 tsp salt
1 egg's worth of Ener-G egg replacer, or other replacer
1-1/4 cups soymilk
4 TBS canola oil
1 12oz bag of Gharadelli Semi-Sweet Chocolate chips (or other vegan choc. chip)
Smart balance or Pam spray for the pan

1. Preheat oven to 400 degrees.
2. Mix flour, baking powder, sugar, and salt in a bowl.
3. Add the oil, soymilk, and egg replacer to the flour mix and stir until fully moistened.
4. Add the chocolate chips to the batter.
5. Grease or spray the muffin tin, and fill the muffin tins 1/2 to 2/3 full.
6. Top each muffin with sugar and bake for about 25 minutes.

Check the muffins after 20 minutes. Inserted with a fork, the batter shouldn't leave marks but it should still be moist.

Not much in the world of Veganism. Went shopping at Rock and Roll Ralph’s because it’s got the bigger Tofu section in my ‘hood. To be honest, I could wander around that grocery store for HOURS. I prefer to go food shopping in the middle of the night because their not that many people there and I get to meet freaks like me. Ralph’s is a bit pricy but I’ll have to work around it. I bought something different for dessert, coco-puffs and Toffutti chocolate ice cream sandwiches (can’t I just say sammiches?) I’m on the lookout for Vegan Mac and cheese. Can anyone help out?
